This recipe comes from an old episode of Jacque Pepin’s cooking show I watched on the KQED Youtube Channel, and I really love any opportunity to cook one of his meals. His recipes are always so thoughtful, generally focused on being inexpensive and approachable for home cooks, and full of tips for lowering the fat content and unnecessary calories without sacrificing flavor. But this is a story about how I made it and what I discovered while doing so. Enjoy!
